BACON, ROCKET, APPLE AND GOATS CHEESE SALAD WITH HEARTBEET AND TOASTED WALNUTS

A delicious quick salad to rustle up on a summers day that’s packed with protein and probiotics.

INGREDIENTS
120g rocket 
1 apple sliced
5 streaky bacon rashers
30g toasted walnuts
40g goat’s cheese 
80g Living Goodness Heartbeet Kraut

INGREDIENTS FOR DRESSING
2 tablespoons of plain unsweetened Greek yogurt
1 tablespoon olive oil
½ tablespoon whole grain mustard
1 tablespoon honey
¼ tablespoon apple cider vinegar

METHOD
 • Place the streaky bacon onto a baking tray & bake in the oven for 10 minutes at 200 degrees till crispy.
• Remove from the oven and allow to cool. 
• Once cooled snap the bacon into smaller pieces.
• To make the dressing combine all the ingredients into a bowl and mix well.
• To assemble the salad, combine the rocket, toasted walnuts, sliced apple, Heartbeat Kraut and crispy bacon. 
• Sprinkle over the goat’s cheese and drizzle on the dressing. 
• Toss before serving.
