REUBEN SANDWICH WITH CORNED BEEF
A traditional sauerkraut sandwich with corned beef, Swiss cheese and a tasty Russian dressing served on a hearty rye bread.

INGREDIENTS FOR RUSSIAN DRESSING
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon dill pickle relish
1 tablespoon fresh lemon juice
1 teaspoon grated horseradish or horseradish sauce from a jar
Salt and freshly ground black pepper
INGREDIENTS FOR SANDWICH
200g sliced corned beef or smoked beef
1 cup Living Goodness Heartbeet Kraut
8 slices rye bread (or pumpernickel bread)
8 slices Swiss cheese
Unsalted butter, softened
METHOD FOR RUSSIAN DRESSING
• In a medium bowl, stir together all ingredients.
• Season with salt and pepper and set aside.
METHOD FOR SANDWICH
• Lightly butter one side of bread slices.
• Spread non-buttered sides with Russian Dressing.
• On 4 bread slices layer 1 slice Swiss cheese, a few slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese.
• Top with remaining bread slices, buttered sides out.
• Grill sandwiches until nice and brown, about 15 minutes.
Serve hot.
