VEGAN VEGGIE GOODNESS FRITTERS (GF)
A quick, easy and super healthy lunch for those long summer days. Who doesn’t love a good fritter?!
MAKES 11-12 FRITTERS

INGREDIENTS
1 ¼ cups chickpea (garbanzo bean) flour
1 small zucchini
1 cup sweetcorn
½ large onion
¼ capsicum
1 tablespoon minced garlic
1 teaspoon paprika
1 teaspoon oregano
1 teaspoon green herb or vege stock
2 tablespoon plant milk
¼ cup + 2 tablespoons water
Salt and pepper
Extra virgin olive oil
TO SERVE
Living Goodness Sassy Sauerkraut
Sliced / diced avocado
Coconut yoghurt
Black Pepper
METHOD
• Finely chop onion and capsicum and grate zucchini.
• Add flour, veggies, garlic, herbs and spices, salt and pepper to a large bowl, mixing to combine. Add in ¼ cup water, mix to combine before adding in the final 2 tablespoons of milk. Mix well until a fritter batter forms.
• Leave batter to sit for 15-20 mins (optional but allows the moisture from the zucchini to be absorbed).
• Heat 1-2 tablespoons of extra virgin olive oil in a large pan over a medium heat.
• While your pan heats up, scoop ¼ cup of batter and form into fritters, repeating until all batter is used up.
• Once the pan is hot, drop your fritters into the pan and press down with a spatula.
• Cook for around 3-5 mins or until nicely golden before flipping and cooking the other side the same.
• Make sure to add more oil to the pan between fritters, otherwise they may stick or not go nicely golden!
• Serve and top with Sassy Sauerkraut, coconut yoghurt, sliced avocado and a little black pepper.
